Lyme Bay pairings

With ripe fruit flavours, a soothing warmth and a long finish, fruit liqueurs have always been a natural match for a cheeseboard. To help inspire a new generation to understand the joy of a traditional digestif, the team at Lyme Bay Winery have hand-picked some of their own range of liqueurs to pair up with our Quicke’s clothbound cheeses.

Lyme Bay Winery Apricot Brandy and Quicke’s Goat’s Milk Clothbound Cheese

This smooth and richly scented liqueur delivers ripe apricots on the palate, as if plucked fresh from the branches, which balances elegantly with the vibrant and creamy hard goat’s cheese. A gentle brandy finish combines with the cheese’s nutty flavour notes, giving this pairing impressive length.

Lyme Bay Winery Blackcurrant Rum and Quicke's Extra Mature Clothbound Cheddar

There’s a brooding intensity to our Blackcurrant Rum that definitely calls for one of Quicke’s more mature cheddars and the team at Lyme Bay felt the 18-21-month Extra Mature Clothbound Cheddar was more than a match. Full flavoured and sweet, the rum brings out each layer of complex flavour in this beautifully rounded wedge. This is a pairing that packs a punch!

Lyme Bay Winery Damson Liqueur and Quicke's Oak Smoked Clothbound Cheddar

A meeting of smoky and sour, this pairing dances on the palate as the delicately smoked cheese first comes together with the punchy damson flavours. Giving way to lighter fruity notes, met with the legendary creaminess of Quicke’s cheddar, this one kept our team coming back for more.
