FAQs

Cheese

Is Quicke's cheese vegetarian?

We have a range of cheese that is suitable for vegetarians; Double Devonshire, Devonshire Red, Elderflower and our Goat's Milk cheeses. These cheeses are made using vegetarian rennet and vegetable oil. View our vegetarian cheeses.

Our cheddars are made using animal rennet and we use lard in a traditional fashion to soak the muslin that wraps our clothbound cheese.

Is Quicke's cheese pasteurised?

Yes, all of our range of clothbound cheese is made using pasteurised milk.

Is Quicke's cheese made using all your own milk?

Our milk comes from our own herd of Quicke’s cows. Our cows are grass-fed almost year-round and spend most of their lives outdoors. A combination of our breeding programme and the animals’ diet gives us the milk we’re looking for in cheesemaking.

However, we don’t keep our own goats on the farm. Our expertise is cows, and it would be a whole new enterprise to start farming goats. So we focus on managing our herd of dairy cows, and we buy goat’s milk and ewe's milk in from other farmers in the South West of England – supporting our local farming community along the way.

Storage

How long will my cheese last?

Stored correctly, your unopened cheese can be kept to enjoy at your leisure according to the Best Before Date indicated on its packaging. Once opened, we recommend wrapping your cheese in grease-proof paper and storing it in an air-tight container in the fridge. Kept like this it should last up to 14 days.

Please note: Our Farmstead Cheese Box  contains hand-cut cheeses and once received needs to be consumed within 14 days.

How should I store my cheese?

All cheese needs to be stored in the refrigerator, below 8°C. To find out how to store individual cuts, please read our guide on cheese care.

What temperature is best to serve my cheese?

We would recommend bringing your cheese out of the fridge two hours before you are going to serve it, which will be long enough for it to reach room temperature - the ideal temperature at which to eat cheese.
