Description

As seen In BBC GOOD FOOD MAGAZINE

"The Quicke family has been farming the land near Crediton for 500 years, and have been making clothbound cheese for five generations. This wonderful little truckle disguises the vibrant amber paste within, which has been infused with natural annatto. Matured for up to six months, the cheese is delicately sweet when young, developing more distinct butterscotch and nut flavours and a crumbly texture with age. Visually stunning, it pairs well with fruity cider or crisp dry white wine."

Our distinctive take on Red Leicester. A fresher cheese than our traditional cheddar our Devonshire Red retains a nuttiness, combined with a lemony creaminess and a glorious crumbly texture. Infused with natural annatto for an intense amber colour. Typically matured for 3-6 months.

Cheese care

HOW TO STORE – WHOLE You can store your whole sealed clothbound truckle in a damp, cool environment like a cellar or fridge. We would not recommend exceeding one month’s additional ageing from purchase as we cannot vouch for the conditions being correctly maintained outside of our storeroom at Home Farm. We keep our cheese on wooden shelves to avoid contact with anything which might draw moisture from the cheese or taint it in some way. HOW TO STORE – CUT Once the muslin cloth is off it is best to wrap the cheese and keep it in a cool larder or fridge (8-15ºC). Waxed paper is perfect; clingfilm will do. If using cling film, only cover the cheese’s cut side and use a new piece each time you open it. If it is too dry your cheese may crack; too wet and it’ll become thick with mould. Although this mould is natural and can enhance the flavour of the cheese, we suggest you scrape off the excess before consuming it. CUTTING TIPS- Please see this link on how best to cut the truckle

Quicke's

Thanks, Megan for your lovely review. We do a Mature in the 1.8kg truckle, please find a link to it here. https://www.quickes.co.uk/collections/truckles/products/mature-cheddar-truckle
Unfortunately the older Extra Mature and Vintage aren't compatible in this smaller format as we have to age them on for so much longer that the cheese dries out too much and no longer has the same consistency or texture as a cheddar, I hope that explains why the truckle range is limited. Any more questions please don't hesitate to contact the Cheese Shop Team at shop@quickes.co.uk Thank you.

The best red for me

I love Devonshire Red. It tastes amazing and is very versatile. Excellent in cooking but is at it's best on a cheese board. It's so moreish that it's difficult to stop eating it.

Great cheese

Obviously the Devonshire Red doesn't have the complexity and depth of the mature cheddar, but it adds a welcome variety on the cheeseboard and is nevertheless a terrific cheese
