Our Oak Smoked Clothbound Goat's Milk Cheese is a truly magnificent cheese that recently won a Bronze award at the World Cheese Awards.
It is made by cold-smoking our goat's milk cheese using oak chips from trees that grew tall on our woodlands. Our talented team cut 25kg wheels of our goat's milk cheese into 16ths and then place them on racks in the smoking room overnight. By morning the oak smoke has worked its magic and the 16ths are infused with a subtle smokiness, the cheese is a few shades darker at the edges and the cheese has a delicious nutty and slightly smoky taste.
