More information about the cheeses that make up each tier:

Top Tier:  EVE Handmade in Somerset by White Lake who makes the most incredible soft cheeses. Eve is a unique soft Goat's Cheese, washed in Somerset cider brandy, adding a wonderful depth of flavour. The cheese is then wrapped in a vine leaf and matured. The perfect tier to a wedding cake, adding a bit of colour from the leaves and creating a wonderful nutty finish.

Fourth Tier: BABY BARON BIGOD Handmade in Suffolk by Fen Farm Dairy, this is the smaller sister of Jonny Crickmore's Baron Bigod. Made in small batches to a Brie de Meaux recipe, it’s silky at its rind but crumbly at its core. The Suffolk-born, traditional Brie-style cheese balances a clean lactic brightness with mushroomy, vegetal notes.

Third Tier: WILD GARLIC YARG Handmade in Cornwall, by Lynher Dairy this mini garlic yarg is a semi-hard wrapped cheese using aromatic hand-picked spring garlic from the Cornish woodlands, It has an unmistakable flavour and colour with its wild garlic wrap. Made from grass-rich Cornish cow's milk. Matured for five weeks, it takes on an unmistakable flavour and yet whispers rather than shouts its name. Deliciously different.

Second Tier: COLSTON BASSETT STILTON  Handmade in Nottingham-shire by Colston Bassett Creamery. Stilton’s origins date back to the 18th century when it was eaten at The Bell Inn, Stilton. Now a protected cheese, Stilton can only be made in the counties of Nottinghamshire, Derbyshire and Leicestershire. Colston Bassett Stilton is often considered to be the best. Little has changed since they started making cheese in 1913, and they still use the milk from four of the original local farms that set up the co-operative in the beginning. The reputation of the dairy has gone from strength to strength, and it is now famous for making Stilton that is velvety and smooth, with a full, well-balanced, sweet and ‘mineral-y’ flavour. This Stilton is creamy buttery with the characteristic blue vein of a Stilton. It has a balanced gentler flavour than some stilton.

First Tier: NETTLE CORNISH YARG -This vibrant cheese has been handmade by Lynher Dairies in Cornwall. The cheese is lemon and creamy just under the exquisite nettle rind and gloriously crumbly at the core. The nettles are edible!

Base Tier: QUICKE'S 1.5kg of MATURE- A rich and buttery cheddar that offers outstanding depth of flavour, which develops as it reaches the back of the palate. Brothy to grassy to caramel notes. BUTTERY- An intensely buttery cheddar with a subtle, clean aroma, full of the smooth richness of our Devonshire milk. SMOKED CHEDDAR Hand-selected from our most balanced mature cheddar, this cheese is smoked using oak chips from trees grown on the Quicke's estate for a sensuously smoky, buttery flavour. DOUBLE DEVONSHIRE- Our unique take on a traditional Double Gloucester. Elegantly mellow with a buttery, long-lasting taste.
